To celebrate the school holidays, and prepare ourselves for Term 3, I got Kai and Ryder to pick out one of their absolute favourite recipes from the My Kids Eat Recipe Series! We filmed it in the kitchen to show you guys how quick and easy, yet delicious the end result was!

Funnily enough, Ryder picked a super simple recipe from My Kids Eat Volume 2, and Kai picked one from the OG My Kids Eat Volume 1

Fruit 'Pizza' Wedges with 'Fries'

The Fruit 'Pizza' Wedges with 'Fries' in MKEV2 is a fun, quick and easy recipe that is a great way to get kids creative juices flowing in the kitchen. An easier, no-fuss recipe like these Watermelon Wedges is a great introduction to getting your children more involved in the kitchen, and delegating them more responsibility. Tip

🍉 The pizza can be assembled up to 3 hours ahead; storing in the fridge. 

🍉 Any colourful fruit can be used as a ‘pizza’ topping, although fruit that browns when cut, such as apples, pears and bananas, should not be used unless the ‘pizza’ is served immediately. 

Along with an afternoon snack or weekend midday slump buster, you could also bring this to your next kids' party! Our household is a very pro-FRUIT household. We love our fruit. The fruit bowl is always packed to the brim, and there are always seasonal fruits chopped up and ready to go in the fridge for fruit salads and smoothies. Watermelon is packed with the antioxidant lycopene, which is often linked to tomatoes. Did you know? A 100g serve of watermelon contains more lycopene than a 100g serve of tomatoes?! 

Waffles

The Waffles from MKEV1 are SO delicious. The best part? You can make them sweet or savoury. Unlike your typical waffles, these bad boys are refined-sugar free, dairy-free and egg-free! Only 8 ingredients are required, and you can mix up a huge batch to freeze waffles in freezer bags and save for a rainy day or lunchbox needing some more volume 🙊

There are plenty of ways you can jazz up these waffles. Try one of these sweet or savoury topping ideas next:

Sweet

  • With homemade chocolate sauce - I have a 3-ingredient chocolate sauce recipe in MKEV1!
  • Sliced bananas, melted peanut butter and a drizzle of honey
  • Mixed berries and cinnamon

Savoury

  • Served for breakfast alongside eggs, avocado and grilled tomato
  • Vegemite and cheese
  • Savoury mince and mushrooms

Tip

Prepare a big batch and store 1-2 waffles in bags. Take out of the freezer in the morning and pop into lunchbox so they are defrosted and ready to enjoy for morning tea or afternoon tea.
