I have a super simple and deliciously healthy green smoothie recipe that I’ve been itching to share with you. Honestly, it’s SO easy to make and I always feel so nourished from within after I have this. 

There are plenty of green smoothies out there, but that grassy, bitter aftertaste? No thanks. I want something that not only fuels and nourishes my bod, but I actually ENJOY drinking. I also wanted to create a green smoothie recipe that my kids are going to like the taste of too. We all know kids need to eat their greens and this is a quick, easy and tasty way to get some green goodness into them! 

Another great thing about this recipe is that you can adjust it however you like - you can add a variety of green vegetables or fruits, such as lettuce, pear or honeydew melon. Prefer a sweeter juice? Swap the coconut water with fresh juice.

Here it is, my Green Machine Smoothie recipe from My Kids Eat Volume 2

Green Machine Smoothie 

Prep time: 5 minutes

Serves: 2 

INGREDIENTS:

  • 1 medium lime (90g)
  • 1 medium green apple (150g)
  • 1 lebanese cucumber (130g)
  • 1/2 medium avocado (125g)
  • 1 1/4 cups coconut water (310ml)
  • 80g baby spinach leaves

METHOD:

  1. Remove rind from lime and discard. Coarsely chop lime flesh, apple, cucumber, and avocado.
  2. Blend or process in a high powered blender with coconut water and spinach until smooth.
  3. Divide between two glasses and serve immediately. 

Serving suggestion: For added crunch, flavour and nutrition boost, top the smoothies with toasted coconut and chia seeds.
